About the variety:

Mariana is an F1 hybrid cultivar, related to Starmaya. It comes from a cross between IAPAR 59 and an Ethiopian landrace variety, and it's one of the first F1 hybrids to be grown from seed instead of through cloning.

This batch was processed using the natural method, starting with ripe cherries that are sorted at the mill. The cherries are spread on drying patios and then moved to raised beds once partially dried. The entire drying process takes 16–20 days.

About the farm

We had the chance to visit the Aquiares farm, where we saw firsthand how both the coffee and the people are treated with care. The passion for coffee production was evident throughout the process, from the natural drying methods to sampling different varieties. This farm is special to us, as it was the first we visited, and the hospitality was unforgettable, with great food and an energetic, welcoming atmosphere.

Aquiares, meaning "land between rivers," is Costa Rica’s largest farm and home to 1,800 people. Established in 1890, it was transformed by Alfonso Robelo in the 1980s into a thriving community and model of sustainable agriculture. Today, his son Diego leads the farm, continuing a legacy of innovation in specialty coffee. Aquiares is committed to carbon neutrality, sustainable practices, and even welcomes researchers for agricultural and environmental studies. The farm’s impact reaches beyond coffee production, setting an example for sustainability and equity in the coffee industry.
