The Honduras Californeo is one of our premium single-origin coffees, grown in the high-altitude region of Marcala, a renowned coffee-growing area known for its rich soil and ideal climate. The region's unique terroir, with its consistent temperatures, plentiful rainfall, and fertile volcanic soil, contributes to the complex flavors found in each cup.
What makes this coffee special is its honey processing method, which involves leaving the fruit mucilage (the sticky, honey-like layer) on the beans during drying. Unlike traditional washed processing, where the fruit is completely removed, this method allows for more natural sugars to infuse into the beans, resulting in a sweeter, fruitier cup with a smooth, balanced flavor.
